Corina's Salad








This is Corina's "Green Bean & Summer Radish Salad". She cut the recipe out of her school lunch calendar.

2 pounds green beans

1 bunch radishes

2 cloves chopped garlic

2 TBSP Italian parsley, chopped

1/4 cup olive oil

zest and juice of one lemon

1 TBSP apple cider vinegar

salt and pepper "to taste"

Trim, cut into one inch pieces and blanch the green beans (simmer in water for 2 -3 minutes unitl the color brightens up). Remove immediately and run under cold water.

Slice radishes into thin circles.

Mix garlic, olive oil, lemon juice and zest and vinegar. Whisk whisk whisk with a fork.

Toss beans and radishes w/ dressing. Add parsley and salt and pepper.
